Airfryer Salmon Cakes

These air fryer salmon cakes make for a delicious snack or appetizer that is made to impress. They are also loaded with protein and omega-3 fats making them a great diabetes-friendly option!

Ingredients

  • 7 oz salmon canned, drained
  • ½ cup almond flour
  • ¼ cup parmesan cheese grated
  • ¼ cup green onion chopped
  • ¼ cup celery finely chopped
  • 2 egg lightly beaten
  • 2 tbsp dill fresh, finely chopped
  • 1 tbsp parsley fresh, finely chopped
  • 1 tbsp dijon mustard
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tbsp olive oil

Garnishes (optional)

Instructions

  • Preheat the airfryer to 400F (200 C).
  • In a large mixing bowl, mix together salmon, almond flour, parmesan cheese, green onion, celery, egg, dill, parsley, dijon, lemon juice, and garlic powder until well combined.

  • Using a ¼ cup measure, scoop salmon mixture into the palm of your hand and shape into 3-4 inch patties. Lightly brush each patty with olive oil and place into the air fryer basket, leaving space between each one. Depending on the size of your air fryer, you may need to cook them in batches. If you don’t have an airfryer, you can sauté the salmon cakes on a skillet over medium heat for 3-4 minutes on both sides until golden brown.

  • Cook for 12-14 minutes, or until golden brown and crispy, flipping each patty halfway through.
  • Serve salmon cakes with lemon wedges and Greek yogurt.

Cooking Tips

  • Forming Patties: Make sure to press the salmon mixture firmly into patties to help them hold together during cooking. If the mixture feels too wet, you can add a little more almond flour to absorb excess moisture.
  • Air Fryer Cooking: To ensure even cooking and a crispy exterior, avoid overcrowding the air fryer basket. Cooking in batches may be necessary depending on the size of your air fryer.
  • Serving Suggestions: While lemon wedges and Greek yogurt are suggested garnishes, these salmon cakes can also be served with a side salad or over a bed of greens for a complete meal.
