Ingredients

  • 1 tbsp water
  • 1 apple small, diced
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp maple syrup or a few drops of stevia for a lower-sugar option
  • ¼ tsp vanilla extract
  • ½ cup Greek yogurt plain
  • 1 tsp chia seeds

Notes

*The nutritional analysis is based on using maple syrup for sweetness.

Equipment

  • skillet

Instructions

  • In a small skillet over medium heat, add one tablespoon of water, the diced apple, cinnamon, nutmeg, and maple syrup (or stevia). Cook for about 3-5 minutes, stirring occasionally, until the apple is softened and caramelized. Let it cool slightly.
1 tbsp water, 1 apple, ½ tsp cinnamon, ¼ tsp nutmeg, ½ tsp maple syrup
  • Stir vanilla extract into the Greek yogurt.
¼ tsp vanilla extract, ½ cup Greek yogurt
  • Layer half of the yogurt, followed by half of the cooked apples, and sprinkle with chia seeds.
    1 tsp chia seeds
  • Repeat with the remaining yogurt and apples. Serve and enjoy!

Cooking Tips

  • For a warm parfait, prepare the apples just before layering, or reheat slightly before serving.
  • To make it even lower in sugar, use unsweetened Greek yogurt and opt for stevia over maple syrup.
  • Experiment with different types of apples for varying sweetness levels, Granny Smiths work well for a tangier taste.
  • Add a sprinkle of ground flaxseed for extra fibre and omega-3s
