Ingredients

  • 14 oz artichoke hearts drained and squeezed out
  • 1 tbsp olive oil
  • 2 tbsp capers chopped
  • 2 handfuls arugula chopped finely
  • 1 tbsp red onion minced
  • 1/2 lemon juiced
  • 1/8 tsp pepper

Instructions

  • Using a knife, chop the artichokes finely. Transfer to a medium sized bowl.
