Preheat your oven to 350°F (175°C). In a mixing bowl, combine the sliced apples, lemon juice, cinnamon, nutmeg, honey, and vanilla extract. Toss well to coat the apples evenly, then transfer to a 9x9 round baking dish.

In a separate bowl, mix together almond flour, oats, flaxseed, chopped nuts, melted coconut oil, honey, cinnamon, and salt. Stir until the mixture is crumbly and well combined.

Sprinkle the topping evenly over the apples in the baking dish.
Bake in the preheated oven for 25-30 minutes or until the apples are tender and the topping is golden brown.
Let cool slightly before serving. Enjoy with a dollop of unsweetened Greek yogurt, if desired.
