Ingredients

For the Wraps:

  • 1 cup cottage cheese small or large curd, low fat
  • 1 egg
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

For the Filling:

  • 2 tbsp hummus
  • 1 cup greens arugula or spinach
  • ½ cup cherry tomatoes halved
  • ¼ cup cucumber thinly sliced
  • ½ avocado thinly sliced

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a blender, combine the cottage cheese, egg, garlic powder, and onion powder. Blend until smooth, achieving a consistency similar to thick milk.

  • Pour the batter onto the prepared baking sheet, spreading it into a thin, even rectangle.
  • Bake for 25-30 minutes, or until the wrap is firm and lightly golden. Allow to cool completely before carefully peeling it off the parchment paper. Carefully cut in half to create two separate wraps.
  • Place a cooled wrap on a clean surface. Spread a tablespoon of hummus and layer salad greens, cherry tomatoes, cucumber, and avocado onto the wrap.

  • Fold or roll up the wrap tightly to enclose the filling. Repeat with the second wrap and remaining ingredients.
