Ingredients

  • 1 cup black beans canned, rinsed and drained very well
  • ¾ cup zucchini finely grated, lightly squeezed to remove excess moisture
  • 1 large egg
  • ¼ cup melted butter or neutral oil
  • cup maple syrup or sugar-free maple syrup
  • 1 tsp vanilla extract
  • ½ cup cocoa powder unsweetened
  • ¼ tsp salt
  • ½ tsp baking powder
  • cup dark chocolate chips optional

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment paper.
  • Grate the zucchini and gently squeeze it in a clean towel or paper towel to remove excess water. Set aside.

  • Spread the batter evenly in the prepared pan.
