Ingredients

  • 1 tsp olive oil
  • 1 lb ground chicken
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ¼ tsp pepper
  • 3 tbsp marinara sauce low-sodium
  • 4 tortilla low carb
  • ½ cup marinara sauce low-sodium
  • 1 cup mozzarella cheese part-skim
  • ½ cup green bell pepper chopped
  • ½ cup mushroom chopped
  • ¼ cup red onion chopped

Instructions

  • Heat 1 tsp olive oil in a small skillet over medium heat. Add ground chicken and break it apart with a spatula.

  • Sprinkle garlic powder, Italian seasoning, and black pepper over the chicken. Mix in 3 tablespoons of marinara.

  • Cook, stirring frequently, for 5–7 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C). Remove from heat and set aside.
  • Preheat your oven to 400°F (200°C) and place the tortillas on a baking sheet. Spread 2 tablespoons of marinara sauce evenly over each tortilla, followed by ¼ cup ground chicken, ¼ cup mozzarella cheese, 2 tablespoons each of green bell pepper and mushroom, and 1 tablespoon of red onion. Option to sprinkle additional Italian seasoning or oregano on top, as well as chili flakes for an extra kick.

  • Place the tortilla pizzas in the oven and bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges of the tortilla are golden brown.
  • Remove from the oven and let cool slightly. Slice into wedges and enjoy immediately.
