Heat 1 tsp olive oil in a small skillet over medium heat. Add ground chicken and break it apart with a spatula.
1 tsp olive oil, 1 lb ground chicken
Sprinkle garlic powder, Italian seasoning, and black pepper over the chicken. Mix in 3 tablespoons of marinara.
1 tsp garlic powder, 1 tsp Italian seasoning, ¼ tsp pepper, 3 tbsp marinara sauce
Cook, stirring frequently, for 5–7 minutes until the chicken is fully cooked (internal temperature of 165°F/74°C). Remove from heat and set aside.
Preheat your oven to 400°F (200°C) and place the tortillas on a baking sheet. Spread 2 tablespoons of marinara sauce evenly over each tortilla, followed by ¼ cup ground chicken, ¼ cup mozzarella cheese, 2 tablespoons each of green bell pepper and mushroom, and 1 tablespoon of red onion. Option to sprinkle additional Italian seasoning or oregano on top, as well as chili flakes for an extra kick.
4 tortilla, ½ cup marinara sauce, 1 cup mozzarella cheese, ½ cup green bell pepper, ½ cup mushroom, ¼ cup red onion
Place the tortilla pizzas in the oven and bake for 8–10 minutes, or until the cheese is melted and bubbly and the edges of the tortilla are golden brown.
Remove from the oven and let cool slightly. Slice into wedges and enjoy immediately.
