Instructions
In a non-stick skillet over medium heat, scramble the eggs until fully cooked. Set aside.

In the same skillet, add the fresh spinach leaves and cook until wilted, about 1-2 minutes.

Place the whole grain tortilla on a flat surface. Add the scrambled eggs, wilted spinach, shredded cheese, and salsa in the centre of the tortilla.

Fold in the sides of the tortilla and then roll it up tightly from the bottom to form a burrito.
If desired, place the burrito back in the skillet for 1-2 minutes on each side to lightly brown the tortilla and melt the cheese.
