Breakfast Burrito with Spinach & Salsa

Ingredients

  • 2 egg large
  • 1/2 cup spinach fresh leaves
  • 1 medium tortilla 8-inch, whole grain
  • 1/4 cup cheddar cheese shredded
  • 1/4 cup salsa

Instructions

  • In a non-stick skillet over medium heat, scramble the eggs until fully cooked. Set aside.

  • In the same skillet, add the fresh spinach leaves and cook until wilted, about 1-2 minutes.

  • Place the whole grain tortilla on a flat surface. Add the scrambled eggs, wilted spinach, shredded cheese, and salsa in the centre of the tortilla.

  • Fold in the sides of the tortilla and then roll it up tightly from the bottom to form a burrito.
  • If desired, place the burrito back in the skillet for 1-2 minutes on each side to lightly brown the tortilla and melt the cheese.

  • Wilt Spinach Quickly: Wilt the spinach just until it’s soft to retain its bright green colour and nutrients.
