Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 cup carrot sliced
  • 1 tbsp oregano
  • 1 tsp paprika
  • 1 lb meat lean, ground
  • 1 tbsp soy sauce reduced-sodium
  • 3 cups cabbage roughly chopped
  • ½ cup condensed tomato soup
  • 2 cup tomato canned, diced, low sodium
  • 3 cups beef broth low-sodium
  • 1 bay leaf
  • parsley optional garnish

Notes

If tomato-based soups and stews are too acidic for your preference, it is optional to add 1-2 tsp of brown sugar to the soup before bringing it to a simmer. This helps to cut the acidity of the soup. However, please note that this will add added sugar to the soup.

Instructions

  • In a large pot, heat olive oil over medium-high heat.
    1 tbsp olive oil
  • Stir in the diced onion, garlic, carrot, oregano, and paprika. Cook for 5-7 minutes until the onions and carrots soften.

  • Add the chopped cabbage to the pot. Stir and cook for a few minutes until it starts to wilt.
    3 cups cabbage
