1 clove garlic, 1 cup cherry tomato
  • Add the spiralized zucchini, salt and pepper and toss for 1-2 minutes, turn heat off.

  • Add lemon zest and cheese, and toss.
    1 lemon

    ¼ cup parmesan cheese

Cooking Tips

  • Spiralizing Zucchini: If you don't have a spiralizer, you can use a vegetable peeler to create thin, pasta-like strips of zucchini.
  • Avoid Overcooking: To maintain a texture similar to al dente pasta, cook the zucchini noodles for only 1-2 minutes. Overcooking will make them soggy.
  • Seasoning Adjustments: Adjust the amount of garlic, lemon zest, and pepper based on your taste preferences. For a spicy kick, add a pinch of red pepper flakes.
  • Serving Suggestion: While this dish can stand on its own, pairing it with a protein such as grilled chicken, lean steak, or shrimp can make for a more balanced meal.
