Rinse the cherry tomatoes and basil leaves. Pat them dry with a paper towel.
Assemble the skewers by threading a cherry tomato onto a wooden skewer, followed by a basil leaf, a ball of mozzarella cheese, and a folded arugula or spinach leaf. Repeat this pattern one more time so that each skewer contains doubles of each ingredient.
12 cherry tomato, 12 mozzarella cheese, 12 leaves basil, 12 leaves arugula, 6 small wooden skewers
Arrange the skewers on a serving platter.
Drizzle the balsamic vinegar over the skewers as well as a pinch of pepper.
