Ingredients

  • 2 medium zucchini spiralized into noodles
  • 1 cup cherry tomato halved
  • ½ cup bocconcini small balls, halved
  • 2 tbsp basil fresh leaves, cut into strips
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • ¼ tsp salt
  • tsp pepper

Instructions

  • In a large bowl, combine the zucchini noodles, cherry tomatoes, mozzarella, and basil.
2 medium zucchini, 1 cup cherry tomato, ½ cup bocconcini, 2 tbsp basil
  • Drizzle the olive oil and balsamic vinegar over the salad and toss gently to combine. Season with salt and pepper.
2 tbsp olive oil, 2 tbsp balsamic vinegar, ¼ tsp salt, ⅛ tsp pepper
  • Serve and enjoy!

Cooking Tips

  • Spiralizing zucchini: Ensure that the zucchini is fresh and firm to get the best texture from the noodles. Soft zucchinis can make the noodles mushy.
  • Tossing the salad: Gently toss the ingredients to avoid breaking the zoodle strands and to evenly distribute the dressing.
  • Serving immediately: Serve this salad immediately after dressing to prevent the zoodles from releasing water and becoming soggy.
