Cashew Dill & Jalapeño Dip

This cashew jalapeño dip is a delicious and spicy dip for your favourite raw veggies and high-fibre crackers. It is also a great way to get a boost of fibre, protein, and healthy fats at snack time.

Ingredients

  • 1 cup cashews raw, soaked for 2 hours in water
  • 1 jalapeño if you prefer a spicier dip, use 2 jalapeños
  • 2 cloves garlic roughly chopped
  • 2 tbsp dill fresh
  • ¼ cup lime juice about 3-4 limes
  • ¼ cup water
  • 1 tbsp olive oil
  • tsp salt

Instructions

  • In a food processor or blender, combine the soaked cashews (drained), jalapeños, dill, garlic, lime juice, water, olive oil, and salt. Blend until smooth and creamy. Add more water if needed to reach your desired consistency.

  • Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavours to meld together.

Control the dip's thickness by adding water or a dairy-free milk alternative during blending until you achieve the desired consistency.
