Baked Orange Citrus Chicken Wonton Cups

These chicken wonton cups with orange citrus vinaigrette are everything you want out of an appetizer - crunchy, flavourful, colourful, nutrient-dense and easy to prepare!

Ingredients

  • 12 wonton wrappers
  • 1 tbsp olive oil
  • 1 ½ cup cabbage shredded*
  • cup carrot shredded
  • ¼ cup red onion thinly sliced
  • 1 tbsp cilantro chopped
  • 2 tbsp peanuts chopped
  • ½ cup chicken cooked, shredded*

Orange citrus vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp rice vinegar
  • ¼ cup orange juice from fresh oranges
  • ½ tsp sesame oil
  • 1 Pinch salt
  • 1 Pinch pepper

Notes

*To save time preparing this recipe, use pre-cut cabbage slaw and rotisserie chicken (or any other precooked chicken)

Instructions

  • Preheat the oven to 350F.
  • Brush a 12-cup muffin tin with olive oil, and gently press wonton wrappers into muffin tins to form cups. Lightly brush wonton cups with olive oil and bake in the oven for 6-8 minutes until golden brown and crispy.

  • To a mixing bowl, combine cabbage, carrots, red onion, cilantro, peanuts and chicken.

  • In a small bowl, prepare vinaigrette by gently whisking together olive oil, rice wine vinegar, orange juice, sesame oil, salt and pepper.

  • Pour dressing onto chicken salad mixture and stir until well combined.
  • Spoon mixture into prepared wonton cups and serve at room temperature.

Cooking Tips

Chicken: Cook and shred chicken breasts or use pre-cooked rotisserie chicken for convenience.
Vegetables: Finely shred cabbage, grate carrots, and dice red onion for the filling. Option to sauté them lightly before adding them to the cups for added flavour.
Peanuts: Toast peanuts in a dry skillet for a few minutes until fragrant, then chop them finely for added crunch and flavour.
