Instructions
Using a paper towel or clean kitchen towel, pat the chickpeas dry to remove excess moisture and remove the skins as this will help to yield a smoother cookie dough.
1 ½ cups chickpeas
In a food processor or high-powered blender, combine the chickpeas, peanut butter, honey, vanilla extract, almond flour, salt, and cocoa powder. Blend until you reach a smooth and creamy consistency, scraping down the sides as needed to ensure everything is well combined.
⅓ cup peanut butter, 2 tbsp honey, 1 tsp vanilla extract, 2 tbsp almond flour, ¼ tsp salt, 2 tbsp cocoa powder, ¼ cup dark chocolate chips
Transfer the chickpea mixture to a mixing bowl. Fold in the dark chocolate chips until evenly distributed throughout the dough.
Using your hands, scoop out small portions of the dough and roll them into bite-sized balls. Place the balls on a baking sheet lined with parchment paper.
Refrigerate the chickpea cookie dough balls for at least 30 minutes to firm them up. Once chilled, serve and enjoy!
Cooking Tips
Use Cooked Chickpeas:Start with canned or cooked chickpeas. Ensure they are well-drained and patted dry to achieve the right texture.Blend Well:Blend the chickpeas thoroughly to create a smooth and creamy base for the cookie dough.Incorporate Nut Butter:Include nut butter (like almond or peanut butter) for richness and added creaminess. It also contributes healthy fats.Fold in Dark Chocolate Chips:Gently fold in dark chocolate chips at the end for bursts of chocolatey goodness. Dark chocolate has less sugar compared to milk chocolate.Chill Before Shaping:Allow the dough to chill in the refrigerator for at least 30 minutes before shaping into bites. This helps the mixture firm up for easier handling.Experiment with Texture:Adjust the texture by adding more oats or chickpeas if the dough is too wet, or a bit of liquid if it's too dry.
