No-Bake Chickpea Cookie Dough Balls

These chickpea cookie dough balls will surprise you by how much they taste like cookie dough! They also make for a delicious energy-boosting chocolate-flavoured snack.

Ingredients

  • 1 ½ cups chickpeas canned, drained and rinsed
  • cup peanut butter or an alternative nut butter of choice
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 tbsp almond flour
  • ¼ tsp salt
  • 2 tbsp cocoa powder
  • ¼ cup dark chocolate chips

Notes

*If you want to make the chickpea cookie dough balls higher in protein you can substitute the almond flour with protein powder instead.

Instructions

  • Using a paper towel or clean kitchen towel, pat the chickpeas dry to remove excess moisture and remove the skins as this will help to yield a smoother cookie dough.
    1 ½ cups chickpeas
  • In a food processor or high-powered blender, combine the chickpeas, peanut butter, honey, vanilla extract, almond flour, salt, and cocoa powder. Blend until you reach a smooth and creamy consistency, scraping down the sides as needed to ensure everything is well combined.

  • Transfer the chickpea mixture to a mixing bowl. Fold in the dark chocolate chips until evenly distributed throughout the dough.
  • Using your hands, scoop out small portions of the dough and roll them into bite-sized balls. Place the balls on a baking sheet lined with parchment paper.
  • Refrigerate the chickpea cookie dough balls for at least 30 minutes to firm them up. Once chilled, serve and enjoy!

Use Cooked Chickpeas:
Start with canned or cooked chickpeas. Ensure they are well-drained and patted dry to achieve the right texture.
