Ingredients

  • 2 ripe banana sliced and frozen overnight
  • 2 tbsp Greek yogurt plain
  • 1 tbsp peanut butter natural, unsweetened
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tbsp pecans chopped (for topping)

Equipment

  • Food Processor or high-speed blender

Instructions

  • Slice bananas into coins before freezing—this makes them easier to blend.
    2 ripe banana
  • Place frozen banana slices in a food processor or high-speed blender. Pulse until crumbly, then blend until creamy, scraping down sides as needed.
  • Add Greek yogurt, nut butter, cinnamon, and vanilla. Blend again until smooth and soft-serve-like.
2 tbsp Greek yogurt, 1 tbsp peanut butter, ½ tsp cinnamon, ½ tsp vanilla extract
  • Serve immediately for soft-serve texture, or freeze 1–2 hours for a firmer scoop.
  • Top with chopped nuts for crunch, a sprinkle of hemp hearts, or a drizzle of peanut butter.
    1 tbsp pecans

Cooking Tips

  • Use very ripe bananas with brown spots for maximum natural sweetness.
  • For extra creaminess, use full-fat Greek yogurt (2% or higher).
  • Almond butter adds a subtle sweetness, while peanut butter gives it a stronger flavor.
  • Don’t overblend – once it turns creamy, stop to preserve the soft-serve texture.
  • For a firmer scoop, freeze the blended mixture for 1–2 hours.
  • Optional toppings: cacao nibs, chopped nuts, or a sprinkle of chia seeds for texture and nutrition.
