Ingredients

  • 2 cucumbers thinly sliced
  • 2 tbsp red onion thinly sliced
  • ¼ cup Greek yogurt plain
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tbsp dill fresh, chopped
  • 1 tbsp mint fresh, chopped
  • ½ garlic clove grated (optional)
  • 1 pinch salt
  • 1 pinch black pepper to taste
  • 2 tbsp almonds crushed (optional, for topping)

Instructions

  • Thinly slice the cucumbers and red onion using a mandoline or sharp knife.

  • In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, dill, mint, garlic (if using), salt, and black pepper.
