    3 large eggs
  • Once boiling, cover, turn off heat, and let sit for 10–12 minutes.
  • Transfer to ice water, peel, and slice in half.
  • Remove yolks and place in a bowl.
  • Add avocado and mash with yolks until smooth.
    1 avocado
  • Stir in lime juice, garlic powder, salt, pepper, and cilantro.
2 tsp lime juice, ¼ tsp garlic powder, ⅛ tsp salt, 1 pinch pepper, 2 tbsp cilantro
  • Spoon or pipe back into egg whites.

Cooking Tips

  • Use slightly older eggs as they peel more easily after boiling.
  • Cool eggs completely in ice water to stop cooking and prevent green yolk edges.
  • Mash filling until smooth for a creamy, uniform texture.
  • Add lime juice gradually to balance flavour without overpowering.
  • Use a piping bag or zip-top bag for cleaner, more uniform presentation.
  • Season to taste after mixing since avocado can mellow flavours.
  • Serve fresh to maintain the bright colour and prevent avocado browning.
