Easy Roasted Chicken with Fresh Herbs

You will be surprised at how easy it is to prepare this roasted chicken! This recipe comes together with a simple spice mix and fresh herbs and is super delicious.

Ingredients

  • 1 whole chicken about 3-4 pounds
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp paprika
  • 2 bay leaf
  • 4 sprigs thyme
  • 1 handful parsley
  • 1 small red onion cut into quarters

Instructions

  • Preheat your oven to 425°F (220°C).
  • Pat chicken dry with paper towels and place in a roasting pan or baking dish.

  • In a small bowl, combine olive oil, salt, pepper, garlic powder, Italian seasoning, and paprika. Brush chicken evenly with the spice mixture until well coated.

  • To the cavity, insert bay leaves, fresh thyme, parsley, and red onion. This will add additional flavour to the chicken!

  • Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  • Roast the chicken in the preheated oven for about 1 to 1.5 hours, or until the juices run clear and the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  • Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Enjoy!

  • Dry patting the chicken: Ensure the chicken is thoroughly dried with paper towels before seasoning. This helps the skin get crisper and the spices to adhere better.
  • Even coating of spices: Brush the spice mix evenly on the chicken to ensure every part is flavorful.
  • Internal temperature checking: Use a meat thermometer to check the doneness of the chicken; it should reach 165°F (74°C) in the thickest part to ensure it is safely cooked.
