Preheat your oven to 425°F (220°C).
Pat chicken dry with paper towels and place in a roasting pan or baking dish.
1 whole chicken
In a small bowl, combine olive oil, salt, pepper, garlic powder, Italian seasoning, and paprika. Brush chicken evenly with the spice mixture until well coated.

To the cavity, insert bay leaves, fresh thyme, parsley, and red onion. This will add additional flavour to the chicken!
2 bay leaf, 4 sprigs thyme, 1 handful parsley, 1 small red onion
Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
Roast the chicken in the preheated oven for about 1 to 1.5 hours, or until the juices run clear and the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Enjoy!
