Edamame Hummus Dip

This edamame hummus is a great way to add in some extra greens to a crowd pleasing dip and is loaded with protein and fibre. Enjoy it as a spread or serve alongside your favourite crunchy veggies.

Ingredients

  • ½ cup edamame frozen
  • ½ cup chickpeas canned, drained and rinsed
  • 1 clove garlic
  • 1 tbsp tahini
  • 3 tbsp olive oil
  • ¼ cup lemon juice
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup cilantro
  • 1 cup spinach

Instructions

  • Prepare edamame according to package instructions.
    ½ cup edamame
  • To a food processor, add edamame, chickpeas, garlic, tahini, olive oil, lemon juice, salt, pepper, cilantro, and spinach. Blend until smooth.

  • For a thinner texture, add 1 tbsp of water.

Choose Frozen Edamame: Opt for frozen shelled edamame for convenience. Thaw them before using in the recipe.
Garlic: Adjust the amount of garlic to your preference. Roasted garlic can add a milder, sweeter flavour compared to raw garlic.
Water : Add water gradually to achieve the desired consistency. Start with a smaller amount and add more as needed to reach your preferred thickness.
Creaminess: For extra creaminess, you can blend in a bit of Greek yogurt or avocado.
Additional Spices: Customize the flavour by adding spices like cumin, paprika, or red pepper flakes for a hint of heat.
