  • 4 cups chicken broth low-sodium
  • 1 cup mushroom sliced
  • 1 tbsp corn starch
  • 2 egg large
  • 2 stalk green onion finely chopped

Instructions

  • In a medium pot, bring the low-sodium chicken broth to a boil over medium-high heat.

  • Add the sliced mushrooms to the boiling broth and let them cook for 2-3 minutes until they soften.

  • In a separate bowl, beat the eggs until the yolks and whites are fully combined.

  • Add the finely chopped green onion and serve.
