Pan Fried Sesame Snap Peas

These sesame snap peas require only 5 ingredients and only 10 minutes of your time! Enjoy them as a delicious and nutritious side-dish that is also diabetes friendly.

Ingredients

  • ½ lb snap peas
  • tbsp sesame oil
  • 2 cloves garlic smashed and chopped
  • 2 tbsp sesame seeds roasted black and white
  • ¼ tsp salt

Instructions

  • Cut the hard root end off each snap pea, and try to tear some of the tough fibers that come along with the end along the spine of the pea. No need to cut the other end of the pea.

  • In a large fry pan, heat oil over med heat until shimmering, add the chopped garlic. Sauté for 20-30 seconds.
    1½ tbsp sesame oil, 2 cloves garlic
  • Add the snap peas, toss into the oil and let cook tossing several times for about 3-5 minutes. They will soften a little but the idea is to keep them very crunchy. Add the sesame seeds and toss for another minute or so. Sprinkle with coarse salt and serve hot.
    2 tbsp sesame seeds, ¼ tsp salt

  • Preserving Crunch: To maintain the crunchiness of the snap peas, ensure not to overcook them. Cooking for just 3-5 minutes will keep them vibrant and crunchy.
  • Sesame Seed Toasting: If your sesame seeds aren't already roasted, you can quickly toast them in a dry pan for a few minutes until golden brown for an extra burst of flavor.
  • Variety in Sesame: Using both black and white sesame seeds not only adds a nutty flavor but also an appealing visual contrast. However, you can use whatever you have on hand.
  • Garlic Browning: Be careful not to burn the garlic when sautéing, as it can add a bitter taste to the dish. Just a light sauté until it's fragrant is enough.
