Jerk Shrimp Bowl with Pineapple Salsa

This jerk shrimp bowl is the perfect combination of spicy, savoury, and sweet thanks to the addition of a delicious and colourful pineapple salsa.

Ingredients

Jerk Shrimp Marinade

  • 12 oz shrimp precooked*
  • 2 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 lime juiced

Pineapple Salsa

  • 1 cup pineapple diced
  • ½ cup red bell pepper diced
  • ¼ cup red onion finely diced
  • 1 tbsp jalapeno minced
  • 1 lime juiced
  • ¼ cup cilantro chopped
  • 1 tbsp olive oil
  • tsp salt

Beans & Rice

  • 1 ½ cups rice cooked
  • 1 ½ cups black beans canned, rinsed & drained
  • ¼ cup cilantro finely diced

Garnish

  • 1 avocado sliced
  • 1 tbsp cilantro
  • 1/2 lime juiced

Notes

*We used precooked shrimp in this recipe to help speed up preparation. However, If you prefer to use uncooked shrimp, after the shrimp is finished marinating you can preheat a skillet over medium-high heat and cook the shrimp for about 2-3 minutes per side or until they are pink and opaque.
**if you are using jerk seasoning instead of a marinade you can use 2 tablespoons combined with 2 tablespoons of olive oil and juice from 1 lime to create a marinade.

Instructions

  • In a bowl, combine the shrimp, jerk seasoning, olive oil, and lime juice. Toss until the shrimp are evenly coated. Cover and refrigerate for at least 30 minutes to allow the flavours to meld together.

  • While the jerk shrimp is marinating, you can begin to prepare the pineapple salsa. In a bowl, combine the pineapple, red bell pepper, red onion, jalapeno, lime juice, cilantro, olive oil, and salt. Mix everything together until well combined and set aside.

  • In another separate bowl, combine the cooked rice and black beans together as well as ¼ cup of cilantro. Mix together until the beans and rice are evenly incorporated.

  • Once the shrimp have finished marinating, you can reheat the shrimp in the microwave for about 30-45 seconds. If you are using uncooked shrimp, see recipe notes for cooking instructions.
  • Begin to assemble the jerk shrimp bowl by adding ¾ cup of the rice & bean mixture to the bowl, top with ½ cup of the jerk shrimp and ½ cup of the pineapple salsa.
  • Garnish with ¼ of an avocado, extra cilantro leaves, lime wedges.

Cooking Tips

Marination Time:
Allow the shrimp to marinate in the jerk seasoning for at least 30 minutes to absorb the flavors.
Beans & Rice:
Use brown rice for added fiber and nutrients. Prepare beans with minimal added fats and seasonings for a healthy side.
Garnish:
Garnish the dish with additional fresh cilantro or lime wedges for a burst of citrus flavor.
