Roasted Lemon Garlic Salmon

Ingredients

  • 12 oz salmon
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 lemon juice from 1 lemon
  • 1 tsp lemon zest
  • ½ tsp paprika
  • 1 tbsp parsley chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ tsp red chili flakes optional

Notes

*if you prefer cilantro you can swap that in instead of parsley.

  • 1 Baking sheet

Instructions

  • Line a baking sheet with parchment paper and preheat oven to 400F.
  • Place salmon on a baking sheet skin side down.

  • In a small bowl, mix together the garlic, olive oil, lemon juice, lemon zest, paprika, parsley, salt, and pepper.
    4 cloves garlic, 2 tbsp olive oil, 1 lemon, 1 tsp lemon zest, ½ tsp paprika, 1 tbsp parsley, ¼ tsp salt, ¼ tsp pepper
  • Drizzle the lemon garlic mixture over salmon filets and place in the oven for 12-15 minutes or until salmon flakes easily with a fork.
  • If you prefer the salmon to be more browned on top, you can broil it for an additional 2-3 minutes.
  • Serve the salmon with an extra squeeze of lemon, chopped parsley, and chili flakes, if desired.
    ¼ tsp red chili flakes
  • Enjoy with your choice of veggies and high-fiber carbohydrates such as quinoa, barley, or sweet potato.
