Lemony Dill Tuna Salad

This refreshing tuna salad makes for the perfect veggie-packed lunch and is loaded with healthy fats, fibre and protein.

Ingredients

  • 250 grams tuna flaked, light, drained
  • ¼ cup dill fresh, finely chopped
  • 1 tbsp mayo
  • ½ tbsp olive oil
  • 1 lemon juiced
  • 2 tsp red wine vinegar
  • 4 cups arugula
  • ½ cup radicchio shredded
  • ¼ cup red onion sliced
  • 2 tbsp olives green, pitted and sliced
  • ½ avocado sliced

Instructions

  • In a medium bowl, combine together the tuna, dill, mayo, olive oil, lemon juice, and red wine vinegar. Mix until well combined.

  • To a separate bowl, add the arugula, radicchio, red onion, green olives, and avocado. Toss to combine everything together.
