These easy baked pizza bowls are a high-protein, low-carb dinner made with lean ground chicken, vegetables, tomato sauce, and melted cheese. Baked until bubbly and golden, they’re a simple gluten-free comfort meal ready in under 30 minutes.

Ingredients

  • 1 tsp olive oil
  • ½ lb ground chicken lean
  • 1 cup mushrooms finely chopped
  • ½ red bell pepper chopped
  • ¼ cup red onion chopped
  • ½ tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • cup marinara low-sodium
  • ¼ cup mozzarella cheese part-skim, shredded
  • 2 tbsp cottage cheese low-fat

Equipment

  • 1 Large skillet
  • 2 oven-safe ramekins

Instructions

  • Preheat oven to 400°F.
  • Heat olive oil in a skillet over medium heat. Add chicken and cook until browned.

  • Add mushrooms, bell pepper, and red onion. Cook 5–7 minutes until softened and moisture evaporates.

  • Divide mixture into 2 oven-safe bowls or ramekins.
  • Top with mozzarella and small spoonfuls of cottage cheese.

  • Bake 10–15 minutes until bubbly and lightly golden.
  • Finish with basil and chili flakes.

  • Lower Sodium: Choose no-salt-added tomato sauce and low-sodium cottage cheese when possible.
  • Increase Protein: Add extra chicken or stir cottage cheese directly into the filling for more protein per serving.
