Ingredients

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp shallot finely minced
  • 1 tsp garlic minced
  • tsp salt
  • 1 pinch pepper
  • ¼ tsp red chili flakes optional, for a slight kick
  • 2 cups cherry tomato halved
  • 1 tbsp basil fresh leaves, finely chopped

Instructions

  • In a medium bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced shallot, minced garlic, salt, black pepper, and red chili flakes (if using).

  • Add the halved cherry tomatoes to the bowl with the marinade. Gently toss the tomatoes to ensure they are evenly coated with the marinade.
