Ingredients

  • 1 zucchini sliced lengthwise into ¼-inch strips
  • 1 tsp olive oil
  • tsp salt
  • 1 pinch black pepper to taste
  • 2 tbsp goat cheese crumbled
  • 1 tbsp basil chopped
  • ½ tsp lemon zest
  • 1 tsp sun-dried tomatoes finely chopped

Equipment

  • Grill or stovetop grill pan
  • Tongs
  • Basting brush (optional, for applying olive oil)

Instructions

  • Preheat the grill or grill pan over medium-high heat.
  • Brush zucchini slices lightly with olive oil and sprinkle with salt and pepper.
1 zucchini, 1 tsp olive oil, ⅛ tsp salt, 1 pinch black pepper
  • Grill for 2–3 minutes per side, or until grill marks form and zucchini becomes tender but not mushy.
  • Let cool slightly, then sprinkle zucchini slices with goat cheese, basil, lemon zest, and sun-dried tomatoes.
2 tbsp goat cheese, 1 tbsp basil, ½ tsp lemon zest, 1 tsp sun-dried tomatoes

Cooking Tips

  • Don’t overcook the zucchini—aim for grill marks but a firm texture to prevent sogginess.
  • Use soft goat cheese or herbed chèvre for a creamy contrast to the grilled vegetables.
  • Dry sun-dried tomatoes work best; if using oil-packed, pat them dry first.
  • Add a drizzle of balsamic glaze (sugar-free if diabetic-friendly) for extra depth.
  • This recipe works well as a grilled appetizer, topping for toast, or filling for wraps.
  • Swap goat cheese for feta or vegan cheese if preferred.
