Grilled Mexican Street Corn (Elotes)

This Mexican Street Corn is a vibrant and flavourful side dish, perfect for summer cookouts. Grilled to perfection and slathered with a zesty Greek yogurt sauce, it's topped with crumbled cotija cheese and fresh cilantro for a deliciously authentic taste.

Ingredients

  • 4 ears corn husked
  • ¼ cup Greek yogurt plain
  • 2 tbsp mayonnaise light
  • ½ lime juiced
  • ½ tsp chili powder or to taste
  • ¼ tsp smoked paprika optional
  • 1 tsp garlic minced
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tbsp cilantro fresh, chopped
  • 2 tbsp cotija cheese crumbled, or feta cheese as a substitute)

Instructions

  • Preheat your grill to medium-high heat. Grill the husked corn directly on the grates, turning occasionally, until the kernels are lightly charred and tender, about 10-15 minutes.

  • In a small bowl, whisk together the Greek yogurt, light mayonnaise, lime juice, chili powder, paprika (if using), garlic, and a pinch of salt and pepper.

  • Once the corn is grilled, remove it from the grill and let it cool slightly. Brush or spoon the yogurt-mayo mixture generously over each ear of corn, coating it well.
  • Sprinkle the corn with crumbled cotija cheese, chopped cilantro, and a light dusting of smoked paprika if using.

  • Serve the street corn immediately with lime wedges on the side for extra zing.
