Preheat your grill to medium-high heat. Grill the husked corn directly on the grates, turning occasionally, until the kernels are lightly charred and tender, about 10-15 minutes.

In a small bowl, whisk together the Greek yogurt, light mayonnaise, lime juice, chili powder, paprika (if using), garlic, and a pinch of salt and pepper.

Once the corn is grilled, remove it from the grill and let it cool slightly. Brush or spoon the yogurt-mayo mixture generously over each ear of corn, coating it well.
Sprinkle the corn with crumbled cotija cheese, chopped cilantro, and a light dusting of smoked paprika if using.

Serve the street corn immediately with lime wedges on the side for extra zing.
