340ggreen beansfresh, trimmed and halved
½red onionthinly sliced
½cucumberdiced
1cupcherry tomatohalved
15ozmixed beanscanned, drained and rinsed
3tbspolive oil
2tbspred wine vinegar

Instructions
Bring a large pot of salted water to a boil and add the green beans. Cook for 2-3 minutes, or until they are bright green and tender-crisp.

Immediately remove the beans and place them under cold running water. Set aside.
In a large bowl, combine the cooked green beans, red onion, cucumber, tomato, and mixed beans.

Drizzle with olive oil, red wine vinegar, and sprinkle with salt and pepper. Toss to coat all ingredients evenly.
