One-Pot Easy Asparagus Soup

This easy asparagus soup is a light, creamy blended soup made with fresh asparagus, onion, garlic, and broth. It’s a healthy low-carb, dairy-free recipe that’s ready in about 35 minutes.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 lbs asparagus woody ends removed, cut into pieces
  • 4 cups chicken broth reduced-sodium
  • 1/4 tsp black pepper
  • 1 pinch salt
  • 1 tbsp lemon juice
  • 2 tbsp chives fresh, chopped

Equipment

  • Large pot
  • Immersion blender or standard blender

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add onion and cook 5–6 minutes until softened.

  • Stir in asparagus, broth, black pepper, and salt.

  • Bring to a boil, then reduce heat and simmer for 15–20 minutes until asparagus is very tender.
  • Blend until smooth using an immersion blender.
  • Stir in lemon juice and adjust seasoning.
