Ingredients

  • 1 pita whole grain or low carb
  • 1/2 tbsp olive oil
  • 1/2 peach ripe, thinly sliced
  • ¼ cup mozzarella thinly sliced or torn into pieces
  • 1 tbsp balsamic vinegar
  • 1 tbsp walnut chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tbsp basil fresh leaves, torn or julienned
  • 1 handful arugula

Instructions

  • Preheat your oven to 375°F (190°C).
  • Place the flatbread on a baking sheet and drizzle the olive oil evenly over the flatbread.

  • Arrange the thinly sliced peach and fresh mozzarella on the flatbread. Drizzle with balsamic vinegar, top with walnuts, and season with a pinch of salt and pepper to taste.

  • Place the flatbread in the preheated oven and bake for 8-10 minutes, or until the mozzarella is melted and bubbly, and the flatbread is lightly crisped.
  • Remove the flatbread from the oven and sprinkle basil leaves over the top followed by a handful of arugula.

  • Slice the flatbread into portions and enjoy immediately.
