Preheat your oven to 375°F (190°C).
Place the flatbread on a baking sheet and drizzle the olive oil evenly over the flatbread.
1 pita, 1/2 tbsp olive oil
Arrange the thinly sliced peach and fresh mozzarella on the flatbread. Drizzle with balsamic vinegar, top with walnuts, and season with a pinch of salt and pepper to taste.

Place the flatbread in the preheated oven and bake for 8-10 minutes, or until the mozzarella is melted and bubbly, and the flatbread is lightly crisped.
Remove the flatbread from the oven and sprinkle basil leaves over the top followed by a handful of arugula.

Slice the flatbread into portions and enjoy immediately.
