Easy Pico de Gallo Salsa

Nothing is more refreshing than a zesty pico de gallo that uses fresh ingredients! This pico de gallo recipe can be ready in 5 minutes and makes for a delicious accompaniment to meals or enjoyed on its own as a snack with a side of veggies and whole wheat pita chips.

Ingredients

  • 3 tomato cut into wedges
  • ½ cup cilantro
  • 2 cloves garlic
  • 1 tbsp olive oil
  • ½ lime juiced
  • ½ small red onion roughly chopped
  • ½ medium jalapeño roughly chopped
  • tsp salt
  • tsp pepper

Instructions

  • To a food processor, add tomatoes, cilantro, garlic, olive oil, lime juice, red onion, jalapeño, salt, and pepper.

  • Gently pulse to combine but still make sure to leave chunks. Being mindful not to over blend too much because otherwise it will be too creamy and watery.
  • Portion into a serving bowl and serve alongside raw veggies and tortillas, or as an accompaniment to your meals.

  • Chunky texture: For the best texture, pulse the ingredients in the food processor only a few times. You're aiming for a chunky salsa, not a puree.
