Ingredients

  • 8 corn tostadas 5-inch, store-bought
  • 15 oz beets canned, sliced or whole, drained and diced (yields about 1½ cups)
  • 1 tbsp balsamic vinegar
  • 1 pinch salt
  • 1 pinch pepper
  • ½ cup goat cheese soft
  • 1 tbsp Greek yogurt plain

Optional Toppings:

  • arugula
  • walnuts chopped
  • balsamic glaze drizzled

Instructions

  • Drain canned beets well and dice into small cubes. Pat dry with paper towels to remove excess moisture (optional but recommended). Toss with balsamic vinegar, salt, and pepper. Set aside.
