Ingredients

  • 1 cup quinoa cooked and cooled
  • 2 egg lightly beaten
  • 1 cup onion finely chopped
  • 1 ¼ cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • ½ cup basil fresh, chopped
  • ½ cup cherry tomato chopped
  • ½ tsp salt
  • 1 tsp paprika
  • 1 tsp oregano dried
  • 1 cup pizza sauce optional for dipping

Instructions

  • Preheat oven to 350°F.
  • Grease a 24-cup mini muffin tin with non-stick spray.
  • Mix the cooled quinoa with all the other ingredients EXCEPT the pizza sauce.

  • Fill each cup to the top with the mixture, press down to compact a little and then fill up some more.
  • Bake for 20 minutes or until golden brown.
  • Let cool for 10 minutes before removing them from the muffin tin.
  • Serve with warm pizza sauce in a separate bowl.
