Salmon Cucumber Bites

These crowd pleasing salmon cucumber bites make for a delicious low-carb appetizer that is perfect for any get together. Made with smoked salmon and a quick and easy yogurt-dill dip, this recipe will be sure to be a fan favourite in any household.

Ingredients

  • 1 cucumber sliced
  • ½ cup Greek yogurt
  • 1 tbsp dill fresh, finely chopped
  • 1 tsp dried minced onion
  • 1/2 lime juiced
  • 1 pinch salt
  • 6 oz smoked salmon *

Optional garnish

  • sesame seeds
  • dehydrated onion
  • dill sprigs

Notes

*Note that smoked salmon is typically higher in sodium. If you are watching your sodium intake you can opt for cooked salmon instead.

Instructions

  • Slice the cucumber into rounds that are about 1/2 inch thick. Pat dry with a paper towel to remove excess moisture.

  • In a small mixing bowl, combine the Greek yogurt with dill, dehydrated onion, lime juice, and a pinch of salt.
    ½ cup Greek yogurt, 1 tbsp dill, 1 tsp dried minced onion, 1/2 lime, 1 pinch salt
  • Using a teaspoon, carefully spread the dill yogurt mixture onto each cucumber round.
  • Using your fingers or a knife, break smoked salmon into smaller pieces and top each cucumber with a piece of salmon.

  • Option to garnish each bite with sesame seeds, dehydrated onion, and dill sprigs.
