Baked Salmon Foil Pack

Ingredients

  • ½ bunch asparagus trimmed
  • 1 fillet salmon
  • ¼ cup corn kernels, fresh or frozen
  • ½ cup cherry tomatoes halved
  • ½ lemon sliced
  • 1 pinch dill chopped (optional, for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Lay a sheet of aluminum foil on a flat surface.
  • Layer the foil pack by adding the asparagus on the bottom followed by the salmon. Add the corn and cherry tomato, followed by a squeeze of lemon and a sprinkle of dill (if using). Place a few lemon slices on top.

  • Bring the long sides of the foil up to the centre and fold them over to create a seam. Then fold the shorter sides in, sealing the foil packs completely.
  • Place the foil packs on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Carefully open the foil packs (beware of the hot steam) and transfer the salmon and vegetables to plates.
  • Serve immediately and enjoy!
