Ingredients

  • 2 avocado ripe
  • 5 oz salmon canned, drained and flaked
  • ¼ cup Greek yogurt plain
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice fresh
  • ¼ cup celery finely diced
  • 2 tbsp cilantro chopped
  • tsp salt
  • ¼ tsp pepper
  • 1 tbsp chives chopped (for garnish)

Instructions

  • In a medium bowl, combine the flaked salmon, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, diced celery, and chopped cilantro. Mix until well combined. Season with salt and freshly ground black pepper to taste.

  • Slice the avocados in half lengthwise and remove the pits. If necessary, slightly scoop out some of the flesh to create a larger cavity for the filling.

  • Sprinkle with chopped chives or dill if desired. Serve immediately.
