Ingredients

  • cups radish halved
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • ¼ tsp thyme dried
  • tsp salt
  • ¼ tsp pepper
  • 2 tbsp Parmesan freshly grated

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • In a bowl, toss halved radishes with olive oil, balsamic vinegar, garlic powder, smoked paprika, thyme, salt, and pepper until well coated.

  • Spread on the prepared baking sheet, cut side down.
  • Roast for 25–30 minutes, flipping halfway through, until golden, tender, and caramelized at the edges.
  • Immediately sprinkle with Parmesan while hot so it slightly melts.
