Ingredients

  • 2 slices bread whole-grain or low-carb bread
  • 1 tomato ripe
  • 1 garlic clove
  • 2 tbsp ricotta cheese
  • 1 tbsp olive oil extra virgin
  • 1 pinch salt sea salt
  • 1 pinch pepper freshly ground, optional

Instructions

  • Lightly toast the slices of whole-grain bread until they are golden brown and crisp.

  • Cut the tomato in half. Grate the cut side of the tomato on the large holes of a box grater, discarding the skin. You should have a thick, slightly chunky tomato pulp.

  • Peel the garlic clove and rub it over the surface of the toasted bread. This will give the bread a mild garlic flavour.

  • Evenly spread 1 tablespoon of ricotta cheese on each slice of toasted bread. The creamy ricotta adds a rich texture and balances the acidity of the tomato.

  • Drizzle each slice with extra virgin olive oil.
