Set your oven to 200°F (95°C).
Line a large baking sheet with parchment paper.
Using a mandoline or a sharp knife, slice the apples crosswise into thin rounds, about 1/8 inch thick. Remove any seeds.

Arrange the apple slices in a single layer on the prepared baking sheet. Sprinkle evenly with ground cinnamon and nutmeg.

Place the baking sheet in the preheated oven. Bake for 1 hour, then flip the apple slices to ensure even drying. Continue baking for an additional 1 to 2 hours, checking periodically, until the apple slices are dry and crisp.
Once baked, remove the apple chips from the oven and let them cool completely. They will become crisper as they cool. Store in an airtight container to maintain their crunch.
