Strawberry Mint Protein “Froyo”

This strawberry mint “froyo” makes for a delicious and refreshing snack that can be made in 5 minutes. It also only requires 4 ingredients and provides 9 grams of protein per serving!

Ingredients

  • 2 cups strawberries fresh or frozen*
  • 1 cup cottage cheese
  • 2 tbsp mint leaves, roughly chopped
  • 1 tbsp honey

Notes

  • If using frozen berries, allow them to thaw at room temperature for 5-10 minutes to allow for easier blending.
  • If you prefer to freeze the strawberry mint “froyo”, prior to serving, let it sit at room temperature for 10 minutes and then scoop it into bowls. Optionally, top it with fresh strawberries and mint leaves.

Instructions

  • In a blender or food processor, combine the strawberries, cottage cheese, mint leaves, and honey. Blend the ingredients until you achieve a smooth and creamy consistency.

  • Option to serve immediately or transfer the mixture to a container and freeze for at least 2-3 hours until firm.
  • Optionally, top it with fresh strawberries and mint leaves.

Cooking Tips

  • Consistency adjustment: If the mixture is too thick after blending, you can add a little water or milk to reach your desired consistency. Start with a tablespoon at a time to avoid making it too thin.
