Notes
If using frozen berries, allow them to thaw at room temperature for 5-10 minutes to allow for easier blending.
If you prefer to freeze the strawberry mint “froyo”, prior to serving, let it sit at room temperature for 10 minutes and then scoop it into bowls. Optionally, top it with fresh strawberries and mint leaves.
Instructions
In a blender or food processor, combine the strawberries, cottage cheese, mint leaves, and honey. Blend the ingredients until you achieve a smooth and creamy consistency.
Option to serve immediately or transfer the mixture to a container and freeze for at least 2-3 hours until firm.
