Pan Fried Turkey Burger Sliders

These turkey burger sliders are made with zucchini, carrot, and bell pepper for an extra dose of fiber, nutrition, and colour! Top with your favourite veggie toppings and enjoy this diabetes-friendly recipe alongside your choice of greens.

Ingredients

  • 1 pound turkey lean ground
  • 1/4 cup onion finely chopped
  • 1/4 cup zucchini grated, squeeze out excess moisture
  • 1/4 cup carrot grated
  • ¼ cup red bell pepper chopped
  • ¼ cup parsley fresh, finely chopped
  • 2 cloves garlic minced
  • 1 tsp oregano dried
  • ½ tsp paprika
  • 1/4 tsp pepper
  • 1/8 tsp salt
  • 8 slider buns whole grain

Optional toppings*

  • tomato slices
  • red onion slices
  • mustard
  • barbecue sauce sugar-free

Notes

Please note that the optional toppings were not included in the nutrient analysis.
As a low carb option, you can substitute the whole wheat slider buns with a lettuce wrap instead.

Instructions

  • In a large bowl, combine ground turkey, onions, zucchini, carrots, red bell pepper, parsley, garlic, oregano, paprika, salt, and pepper. Mix the ingredients well until everything is evenly incorporated. Scoop mixture using a ¼ cup measure, and using your hands form into small patties about the size of your palm.

  • Heat a non-stick skillet over medium heat. Cook the turkey patties for about 4-5 minutes per side or until they are cooked through and have a golden brown exterior. They should have an internal temperature of about 165°F (74°C).
  • Once cooked, place patties in a slider bun and assemble with your choice of toppings.

Cooking Tips

  • Squeezing out moisture: Make sure to squeeze out the excess moisture from the grated zucchini to prevent the burger patties from becoming too wet and falling apart.
  • Uniform patties: Forming the patties to be uniform in size ensures that they cook evenly. A ¼ cup measure can help keep the sizes consistent.
  • Safe cooking temperature: Ensuring the turkey patties reach an internal temperature of 165°F (74°C) is important for food safety. Using a meat thermometer can help verify this.
