Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic, sauté until soft, about 2-3 minutes.

Add ground turkey to the pot and cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes).

Stir in the canned kidney beans, diced tomatoes, tomato sauce, chicken broth, canned carrots, and canned corn. Mix well.

Add the chili powder, cumin, paprika, basil, pepper, and cayenne pepper (if using). Stir everything together and bring the mixture to a simmer.

Let it cook for about 15-20 minutes, stirring occasionally. Adjust seasoning if necessary.
Add the apple cider vinegar, if desired, for added flavour.
