Ingredients

Salad

  • 1 medium turnips very thinly sliced
  • 4 radishes thinly sliced
  • ¼ cucumber thinly sliced
  • ¼ cup red onion thinly sliced
  • ¼ cup almonds shaved
  • 2 tbsp mint chopped
  • 2 tbsp cilantro chopped

Dressing

  • 1 tbsp olive oil
  • tbsp lemon juice fresh
  • 2 tsp whole-grain mustard
  • tsp salt
  • 1 pinch black pepper to taste

Instructions

  • Add the sliced turnips, radishes, cucumber, and red onion to a large bowl.

  • In a small bowl or jar, whisk together olive oil, lemon juice, grainy mustard, salt, and black pepper.

  • Pour the dressing over the vegetables and gently toss to coat.
