Ingredients
½cupcucumbergrated
1cupGreek yogurtplain
2clovesgarlic minced
1tbspolive oil
2tbsplemon juicefreshly squeezed

Instructions
Using a cheese grater, grate the cucumber into thin strips. Option to place the grated cucumber in a fine mesh sieve or cheesecloth and squeeze out excess liquid. Set aside.
