Ingredients

  • 2 cups watermelon cubed
  • 10 cherry tomato halved
  • 2 cucumber cut into half moons
  • 3 ounces feta cheese cut into small cubes
  • 6 mint leaves, slivered
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1/8 tsp pepper
  • ¼ tsp salt

Instructions

  • Gently toss the watermelon cubes with the tomatoes, cucumbers, feta cubes and mint.
