Ingredients

For the roasted vegetables & chickpeas

  • 540 mL chickpeas canned, no-salt-added, drained and rinsed
  • 1 medium zucchini chopped
  • 1 red bell pepper chopped
  • 1 small red onion cut into wedges
  • 1 pint cherry tomatoes
  • 1 tbsp extra-virgin olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ¼ tsp black pepper to taste

For the whipped feta

  • ¾ cup feta cheese crumbled
  • ½ cup Greek yogurt plain, 2%
  • 1 tbsp lemon juice fresh
  • 1 garlic clove
  • ¼ tsp black pepper to taste

For the bowls

  • 2 cups quinoa cooked
  • 2 cups baby arugula
  • 4 lemon wedges for serving

Notes

Portioning guidance (per 1 serving):
  • 1/2 cup cooked quinoa 
  • 1/2 cup arugula 
  • 1/4 cup whipped feta 
  • 1 cup roasted veggie & chickpea mixture

Instructions

  • Preheat oven to 425°F (220°C). Add the chickpeas, zucchini, bell pepper, red onion and tomatoes to a large sheet pan. Toss with olive oil, oregano, garlic powder and black pepper.

  • Roast for 20–25 minutes, stirring halfway through, until the vegetables are tender and lightly browned and the chickpeas are slightly crisp.
  • Meanwhile, add the feta, Greek yogurt, lemon juice, garlic and black pepper to a food processor. Blend until smooth and creamy, adding 1–2 teaspoons of water if needed.

  • Divide the quinoa and greens among four bowls. Top with the roasted vegetables and chickpeas, and a generous spoonful of whipped feta.

Cooking Tips

  • Portion quinoa evenly: Divide the 2 cups of cooked quinoa evenly to provide approximately ½ cup per bowl and make carbohydrate portions more consistent.
  • Rinse chickpeas well: Drain and thoroughly rinse the no-salt-added chickpeas before roasting, then pat them dry if you want a crisper texture.
  • Watch feta sodium: Feta can be relatively salty. If sodium is a concern, compare product labels or use a smaller portion while retaining the Greek yogurt for creaminess.
  • Boost the greens: Adding more arugula or other non-starchy vegetables can increase the vegetable portion without increasing the quinoa serving.
  • Roast in space: Spread the vegetables and chickpeas in a single layer rather than crowding the pan to encourage browning instead of steaming.
