Using a clean kitchen towel or paper towel, squeeze excess moisture from grated zucchini and sweet potato.
2 zucchini, 1 medium sweet potato
In a large bowl, combine zucchini, sweet potato, green onion, garlic, eggs, almond flour, parmesan cheese, salt, pepper, and paprika. Mix until ingredients are well combined. Using your hands, shape mixture into 2-3 inch pancake-like patties.

Air fryer instructions: brush air fryer basket with olive oil and place fritters into air fryer basket, leaving some space between each fritter. Lightly brush each fritter with a little bit of olive oil and cook for 10-15 minutes at 400F (200C) flipping them halfway. Depending on the size of your air fryer you may need to cook the fritters in batches.

Oven instructions: preheat oven to 400F (200C) and add fritters to a prepared baking sheet. Lightly brush each fritter with olive oil and place in the oven and cook for 20-25 minutes, flipping halfway.
While fritters are cooking, prepare dipping sauce by mixing together dill, Greek yogurt, lemon juice, salt, and pepper, in a small bowl.
1 tbsp dill, ½ cup Greek yogurt, ½ lemon, 1/8 tsp salt, 1/4 tsp pepper
Serve fritters with dipping sauce and enjoy!
