Air Fryer Zucchini Sweet Potato Fritters

Get a healthy dose of vegetables for a diabetes-friendly snack or appetizer with these zucchini sweet potato fritters that can be made in the oven or air fryer. They are also served with a lemony yogurt dill dip that you will want to put on everything!

Ingredients

  • 2 zucchini grated
  • 1 medium sweet potato grated
  • ¼ cup green onion chopped
  • 2 cloves garlic minced
  • 2 egg beaten
  • ½ cup almond flour *
  • 2 tbsp parmesan cheese grated
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp paprika
  • 1 tbsp olive oil

Dill Yogurt sauce (makes ½ cup of dip)

  • 1 tbsp dill fresh, chopped
  • ½ cup Greek yogurt
  • ½ lemon juiced
  • 1/8 tsp salt
  • 1/4 tsp pepper

Notes

  • If you don’t have almond flour available, you can also use an equal amount of oat flour instead. You can make your own oat flour at home by pulsing oats in the food processor until it reaches a flour-like consistency. Note that oat flour contains more carbs than almond flour.

Instructions

  • Using a clean kitchen towel or paper towel, squeeze excess moisture from grated zucchini and sweet potato.

  • In a large bowl, combine zucchini, sweet potato, green onion, garlic, eggs, almond flour, parmesan cheese, salt, pepper, and paprika. Mix until ingredients are well combined. Using your hands, shape mixture into 2-3 inch pancake-like patties.

  • Air fryer instructions: brush air fryer basket with olive oil and place fritters into air fryer basket, leaving some space between each fritter. Lightly brush each fritter with a little bit of olive oil and cook for 10-15 minutes at 400F (200C) flipping them halfway. Depending on the size of your air fryer you may need to cook the fritters in batches.

  • Oven instructions: preheat oven to 400F (200C) and add fritters to a prepared baking sheet. Lightly brush each fritter with olive oil and place in the oven and cook for 20-25 minutes, flipping halfway.
  • While fritters are cooking, prepare dipping sauce by mixing together dill, Greek yogurt, lemon juice, salt, and pepper, in a small bowl.

  • Serve fritters with dipping sauce and enjoy!

Cooking Tips

  • Squeezing Out Moisture: Thoroughly squeezing the grated zucchini and sweet potato is crucial to prevent the fritters from becoming soggy and ensure they crisp up nicely.
  • Cooking Method: Both the air fryer and oven methods are great for achieving a crispy texture. The air fryer might provide a quicker and crispier result, but the oven is a good alternative if you're making a larger batch.
  • Dip Variation: The lemony yogurt dill dip is a refreshing complement to the fritters. You can adjust the amount of lemon juice or dill according to your taste preferences.
