Ingredients
- lettuce (green leaf, chopped) 4 cups
- cucumber (chopped) 1/2 cup
- cherry tomato (quartered) 1/2 cup
- corn (canned ) 1/2 cup
- edamame (frozen) 1/2 cup
- strawberries (sliced) 2-3
- avocado (sliced) ½
- feta cheese (crumbled) 2 tbsp
- basil (fresh, cut into strips) 1 tbsp
Lemon Dijon Dressing
- Dijon mustard 2 tsp
- olive oil 2 tbsp
- apple cider vinegar 1 tbsp
- lemon (juiced) 1/2
- salt 1/4 tsp

- Prepare edamame beans according to package instructions. If using edamame beans that are in the pod, rinse with cold water once they are cooked until cool and gently pop the beans out of the pods.1/2 cup edamame
